Nana always said...

keep your friends close and your perogies closer.

Little run down, shall we? We got an early start to Perogie madness,a bout 5:30. We began with doing some research on country music festivals across canada and flights and driving times to each. This may sound, to some, like non essential perogie preparation; however, they would be wrong.
At around 7 we headed tanning, again- not directly related to perogie madness, but who can focus on making gourmet treats when they are pale? Not i said the duck. After a nice little tan we sped over to super store and got down to work.
First- the Joe section. A little browse around the clothing aisles to get ourselves prepared for the Big Shop.
Finally we get to foodstuffs, me and Alanna are in charge of getting the bacon. After some humming and hawwing, comparing and poking, we pick a nice little PC pack. It goes in the basket(we each have a basket as a buggy can be too easy and convenient). Nikita has grabbed two of the biggest sour creams they have. I go on the cheese hunt. They have a whole refrigerated aisle of shredded cheese. my god. We do have some cheddar at home(previously frozen...YES you can freeze cheese, and in fact it makes teh cheese more tasty). So we grab a blended bag of mozza, parm and *insert other white cheese here.
Finally we are in the produce section. We decide that the 20kilo bag of potatoes will be enough and grab the large multi pack of garlic. They are out of regular yams and only have Giant Yams. I convince the girls these will be much easier to work with as there is less peel in relation to how much yam you get. Mini eggs and black penguin candies also have made it into various baskets. The sack of potatoes are being lugged on my shoulder. We make it to the checkout and into the car with no difficulties. The way home involves a stop for Mondo Burritos. At this point it is 830ish and we realize no perogies will be hitting our lips anytime soon.
We get home and dive into the peeling, chopping, boiling, shredding and doughing. Progress is astounding. The mess even more so. At some point Nikita realize she has eaten ALL the eggs in the house. 5 in one day? yes, really. We send her to the gas station for eggs. She returns and we are back on track until we discover the bacon has not made it home with us. Alanna is now off to the store to get some pig fat.
We come up with two different fillings: 1. Potato, cheddar cheese, sauteed onions, garlic and bacon; 2. Yam, rosemary and parmesan. They are delicious. we spend the next ten minutes taste testing. Please note that we have a 10lb bowl of the potato filling and about an 8lb bowl of yam.
The dough gets rolled out, with the one armed rolling pin. We argue about what size glass to use. We end up using a round tupperware container. They are rather large. We try to work up an assembly line but as we are all sitting on stools around the island and are too lazy to move it doesn't go as flawlessly as you would expect. Alanna decides she wants to try a Caliente (red wine with coke). It is delicious fyi. We finally get the cutting and stuffing and sealing down to an art form. It is 1030, alanna throws the towel in. We have thrown a test batch in to boil and then in the frying pan to crisp up. they emerge on a plate and lo and behold it's perogie time. The yam ones are a bit on the sweet side. The potato flavor one is delicious, very reminiscent of garlic fries.
Nikita and i are breaking into over tired giggle fits and decide we will finsih project perogie some other day as we have run out of dough. At this time we still have a totally full bowl of both potato and yam filling. We have approximately 50 perogies. We have brainstormed a few things to do with the leftover filling. Potato pancakes and yam stuffed raviolis. Nothing is definite at this time.
i apologize to Nikita's kitchen for the hell we put it through last night, and in advance for the further damage we will do to it when Perogie PART 2 commences.
