Avocado-Banana-Berry Super Smoothie

Liquid Breakfast... because sometimes chewing is just too much work!

I make a smoothie every morning before work, even though its minus a billion degrees out and it makes my hands numb. I just love them that much. I mix up the ingredients occasionally and thought this version was worth sharing. The avocado added a delicious flavor and made the texture luxuriously smooth, almost like mousse!

Avocado-Banana-Berry Super Smoothie
1 banana
1 avocado
1 cup frozen berries
1 1/2 cup almond milk (or however much you can fit in and still close the lid)
1 scoop vanilla protein powder
1-2 tbsps of flax seed
a dash of cinamon

Put everything in your magic bullet and blend. Do it in the order listed of your protein will stick to the cup and then you will cry. Oh you don't have a magic bullet? I feel sorry for you... You should probably ask Santa for one.

Cranberry Banana Oat Muffins

A freezer full of bananas and a bag of frozen cranberries lead me to this delicious recipe. They are super moist and packed with flavor. I ate them as a snack at work and didn't feel bad because there isn't really much sugar or fat in them. This recipe made about 24 small muffins. Give 'em a try, why don't ya?
Cranberry Banana Oat Muffins (Recipe adapted from food.com)
1 cup all-purpose flour
1/4 cup whole wheat flour
1 cup oats
2/3 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
1 3/4 cups mashed ripe bananas (5-6 bananas)
1/3 cup butter or 1/3 cup margarine, melted
Zest of one orange or lemon
1 cup cranberries

Combine the first seven ingredients in a mixing bowl and mix well. Beat together egg, mashed bananas and melted butter or margarine until smooth. Add to dry ingredients. Stir to blend. Stir in cranberries just until combined. Spoon batter into prepared muffin pan, filling almost to the top. Bake at 375 degrees F for 20 to 25 minutes or until the top springs back when lightly touched.

Shellington's Blueberry Banana Baked Oatmeal

Groundhog Day Star PicMonday through Friday I am totally Bill Murray from Groundhog Day. I wake up, eat oatmeal for breakfast, go to work, go to the gym, eat the same thing for dinner, have a bath, watch some eps of Breaking Bad and go to bed. Wake up and repeat. I hope you didn't read that in a whiny voice, because I actually enjoy having a strict routine during the week. I never have to worry or wonder about what's for breakfast or lunch or dinner. I am food-motivated, so those things are important to me. That being said, sometimes by Thursday I am getting slightly less enthused by my pre-devised meals, and often on Friday I am stoked that they are coming to an end. This week, however, I suffered no such thing. Why? Let me tell you.

Spoon Fork Bacon. Huh? It's a blog I stumbled upon. I honestly can't remember what I was looking for when I found it, although it was probably something bacon related. What made me stop and fall in love was a recipe for "Persimmon and Cranberry Baked Oatmeal". It could have said poop and beans baked oatmeal and I still would have loved it. The idea of baking oatmeal for breakfast stole my heart. Why I haven't done this before is a huge mystery. Perhaps I was not ready for baked oatmeal. I sure am now! 6 days in a row of baked oatmeal for breakfast and I wish I had another six days to go.

I made some changes to her recipe, as I apparently am unwilling and able to follow a recipe as directed. It made 6 portions, which I left in the fridge all week. I heated in the microwave for about 1.5 minutes and served with skim milk, although Greek yogurt would be good too. My next batch will likely contain a sprinkling of chocolate chips and maybe some applesauce for extra fibre and moisture. Here she is:

Shellington's Blueberry Banana Baked Oatmeal

Ingredients:
2 cups steel cut porridge oats (contains oats, flax, oat bran and some other goodies. it's a step up from regular oats)
1/3 cup light brown sugar
1/2 cup ground flax
2 1/2 teaspoon ground cinnamon plus some extra for the chef.
1 teaspoon baking powder
1/4 teaspoon salt
1 can low-fat coconut milk
1/3 cup skim milk
1 egg
2 teaspoons vanilla extract
1 1/2 tablespoons melted coconut oil (it's the cheapest to buy at Costco, obviously)
1/2 cup frozen blueberries
2 banana, mashed with a fork, or chopped. (I think mashed will be more banana bread-like.)

1. Preheat oven to 375°F.
2. Generously grease an 8”x 8” baking dish and set aside.
3. In a large bowl, mix the dry ingredients together.
4. In another mixing bowl whisk together both milks, the egg, vanilla and melted coconut oil.
5. Pour the milk mixture over the oat mixture and stir together.
6. Fold in the blueberries and banana until just combined.
6. Pour mixture into the prepared baking dish and smooth surface with a spatula.
7. Bake for 40 to 45 minute or until golden brown.

two wheelin' fool

Hey, remember when I fell off my bike and broke both my arms? That was fun {insert straight face here}. My main bike riding goal is to NOT do that again. My secondary goals are as follows:

1. To be super ridiculous cheetah speed fast.
2. To not quiver in fear every time i encounter a hill (up or downhill).
3. To acquire an amazing biking outfit (think Lance Armstrong).
4. To be able to bike to work at least once a week and arrive in a timely, non sweaty fashion.

Story time. My bike search ended abruptly yesterday after work. I had officially decided it was time to add bike to my life. A whirlwind tour of Capps, SportMart and SportChek left me dazed and confused, but nonetheless determined. 300 questions and 3 hours later I met Blue Lightning. Him and I and Snazzy White Helmet got loaded up into the car, with the help of Kevin the Salesman, and rode off into the sunset.

Back at the ranch, I got all geared up and then spent twenty minutes trying to fit the non fitting helmet onto my head. {insert lightbulb above head here} THE INSTRUCTIONS! After reading those and cursing for five more minutes the helmet had made it securely onto my head. You can't even imagine how ravishing i looked at this point.

Then it was time to put the front tire back on the bike....no sweat right? wrong. the front brakes are now rubbing on the rim. La de da, sitting in lobby messing with bike. Friendly neighbour comes to the rescue and helps me put it all back together The Right Way (note to self, do things The Right Way first time to avoid lengthy swearing episodes). I jump on my bike and wobble down the street.

Stopped by Uncle Ron's to show off my new ride. What'd you get that for? he asked. Idunno, i replied. I think he was mad that i didn't bring a loaf of banana bread with me.

then I began to ride. Tooker up my usual route down 200th (on the sidewalk of course). The occasional pedestrian and fellow biker were very courteous and usually let me have the right-of-way. I think this is because they saw the terrified expression on my face. I ran over two banana peels to no incident. I got some road riding in on the back streets and headed home when my butt could take it no more. My rudimentary distance calculator in my noggin says i did about 12km.
